I’m here with my second post in a week, and I feel like I’m ready to get back into a proper groove. After only baking a couple of times in January, in the last week alone I’ve baked 3-4 times. So lets get straight back into it. This week I’ve finally made something that’s been on my list for ages; crumpets. I got the poaching rings several months ago and just didn’t get round to it. I love crumpets though, I love the way you can coat them with huge amounts of butter and it both soaks into the holes and pools on the top. The way it dribbles down your arm while you’re eating it. I love covering them with marmite, for a strong tang, or some sweet jam or marmalade.

Cheese Spelt Scones
I had another of those plan-less summer Saturdays that I mentioned in my last post, and guess what, it rained again. That meant I was back to baking. I’ve had a craving lately for scones, and after we’d made spelt dosa with curried paneer for breakfast, I had a whole load of spelt flour leftover. I’ve not used spelt flour with scones before, but after a little searching I found a few recipes which looked pretty great. One of them was full of honey and oats, which I’ve bookmarked for later. Vegan May | Round Up
Now vegan month is all done and dusted I wanted to wrap it all up and talk through a few things that stood out, from the bad to the good. I want to talk through a few things I experienced and chat about generally how easy it can actually be to live vegan in 2017. Peanut Sriracha Soup
I love Sriracha, I’ve said this before and I’ll probably say it again. I’m one of those annoying types who says things like ‘if I could I’d put sriracha on everything’. And I’ve put it on a lot, from sriracha ribs (sorry, any vegans/veggies reading this) and glazed tofu through to popcorn. It has a flavour under the warmth that compliments a lot of dishes. A few months ago I was put onto this peanut sriracha soup recipe by my friend Tiffanni and since then I’ve made it almost monthly. It’s really quick, perfect for a mid week meal, only needs a small selection of ingredients and includes two of my favourite flavours in sriracha and peanut butter.

Courgette Pancakes
If you don’t like pancakes, you’re lying. They are one of the most versatile food types. From crepes to fat american style there’s a huge amount of contrast in both texture and flavour. You can make them sweet or savoury, from the toppings down to the amount of sugar you add into your mix. This particular recipe, for Courgette Pancakes, can be eaten with sweet food (try with syrup and peanut butter like we did) or savoury (omit the sugar from the recipe and have them with something like avocado and eggs).
